Baby leaves

A lot of veggies can be used as baby leaves although their traditional use is cooking, especially at this time of revival and discovery of old and new tastes.
Alongside species like rocket, obtained for this market segment, there are others that can improve the nutrient content and enhance the selection of fresh salad.

About chard, Sais proposes two varieties Candida and Erbette-Romagna.
Candida is a plant with dark green leaves and white chards while Erbette-Romagna has paler leaves with green chards. Both varieties must be cultivated with high planting density and cutting leaves at 12-15 cm. Usually only the first cutting is utilized due to provide high quality production.
